Orange Cake 2




Ingredients that i used to make this cake:
1/2 cup vegetable oil
1/2 cup sugar
1 egg

Beat together the oil, sugar and egg until fluffy. I used hand whisk. Add in 1 tsp orange essence.



1 cup self rising flour
1/4 cup corn flour
1/4 tsp baking powder
1/4 tsp baking soda

Sieve together the flour, baking powder and baking soda. Than alowly add in to the wet ingredients alternately with 1/2 cup fresh orange.

Finally add in handful almond nibs and mix.

Now its ready to bake :)

Orange Cake (Eggless)

Dear Friends,
I follow Hana's Fly blog and did this cake. I modify this recipe as I don't like to use eggs. As usual I use fresh milk. For orange juice I just use 3 tbsp Sunquick and cherries for decoration.










Pumpkin cake (eggless)

Dear frens,
I just follow the Carrot Raisins Cake which I did few weeks ago to do this pumpkin cake. I replace the carrot with smashed pumpkin. I weigh the pumpkin before steam. I replace the raisins with nuts. Its bit moist Pumpkin cake.Try and see.

Carrot Raisins Cake (eggless)









Ingredients:
150gm grated carrot
1/2 cup fresh milk

1 cup self rising flour
1/4 cup corn flour
1/4 tsp baking powder
1/4 tsp soda bikarbonate
1/2 tsp cinnamon powder

1/2 cup oil
1/2 cup honey
1/2 cup brown sugar
1/2 tsp vanila esesnce
a pinch of salt

1/2 cup raisins

Method:
1) Mix together grated carrot in 1/4 cup milk.
2) Sift together the self rising flour,corn flour,baking powder,cinnamon powder and soda.
3) In a bowl, mix together oil,honey, brown sugar and salt .Its difficult to mix well becoz the honey and oil cannot mix together.So i add in the 1/4 cup milk and essence here.
4) Add in the raisins and mix.
5) Now add the sifted ingredients.Mix.
6) Finally add in the grated carrot. Mix well.
7) Grease the pan and bake.

Pumpkin Cake (eggless)









Ingredients:
1 cup vegetable oil
1 cup sugar
200gm flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon powder
1 cup fresh milk
250gm mashed pumpkin


Method:
1)Boil pumpkin and mashed smoothly.
2)Sift together flour,baking powder,soda and cinnamon powder.
3)Mix together the sugar and oil. Than followed by pumpkin and mix well.
4)Add in the flour mix and milk alternately.
5)Don't over mix and pour into the mould and bake.

Pumpkin Carrot Cake (eggless)

Hi everyone,
below is the pictures of my Pumpkin cake which is failed. I didn't follow the recipe exactly because some of the family members are vegetarian. So I skip the egg and add in the fresh milk. So it turn as a 'moist pumpkin cake' :)
Next time I will try again this recipe and will reduce the smashed pumpkin level. Anyway I attach the photos and recipe for your kind view.







Ingredients:

1 cup melted butter
1 cup sugar
1 tsp vanilla essence
350gm pumpkin (cooked n smashed)
1 cup grated carrot
2 cups flour
1 tsp soda bikarbonate
1/2 tsp baking powder
1 1/4 cup fresh milk

Method:
1) Preheat the oven.
2) Mix together the butter, sugar and vanilla essence.
3) Add in the smashed pumpkin and stir.
4) Sift in together the flour, baking powder and soda bikarbonate.
5) Add the flour mix into pumpkin mix alternately with fresh milk until finish.
6) Than add the grated carrot.
7) Pour into baking pan and bake for 3o mins.

Orange Carrot Cake







Ingredients:
125gm butter
3/4 cup sugar
1 1/2 cup self rising flour
2 eggs
1/2 cup fresh milk
1 cup grated carrot (coat with 2 tbsp flour)
1 1/2 tbsp grated orange rind

Method:

1) Grease sides and line the base round cake tin with greaseproof paper.Preheat oven.
2) In a mixing bowl, cream butter, sugar and orange rind until light and creamy.
3) Beat in eggs one at a time.
4) Sift in flour mixture, half-portion and follow by the milk.Than add in the
balance flour.Finally add the carrot and mix well.
5) Mix well until well combined. Turn mixture out into prepared tin and level the
surface with a spatula.
6) Bake in preheated oven for 50–60 minutes or until a wooden skewer inserted into
the centre of the cake comes out clean.
7) Leave the cake to cool for 5–10 minutes before turning out onto a wire rack to
cool completely.

Chocolate Cake







Ingredients:
2 eggs
1 cup vegetable oil
1 cup sugar
1 cup brown sugar
1 tsp vanilla essence
1 1/2 cup chocolate fresh milk
1/2 cup water mix with 2 tsp nescafe
2 tsp soda
1 tsp baking powder
1/2 cup cocoa powder
2 cups wheat flour

Method:
1)Beat egg and sugar until light.Add in vegetable oil and mix well.
2)Sift and mix together the baking powder, soda, cocoa powder and wheat flour.
3)Mix the fresh milk and nescafe mix together with vanilla essence.
4)Add in sifted flour mixture into egg mixture 2–3 batches.
5)Stir in coffee choc mixture and mix well to blend.
6)Pour the mixture into a greased and lined cake tin.
7)Steam in pre-steamed steamer for 30-40 minutes or until cake is cooked through when tested with a skewer.

Upside Down Pineapple Cake


Ingredients:
200gm Castor sugar
180gm butter
4 Eggs
300gm Self Rising flour
1 cup pineapple juice
1 tsp vanilla essence
6 Drained, tinned pineapple slices
1/2 cup brown sugar
6 Cherry

Method:
1) Brush a loaf tin with melted butter. Sprinkle with 1 tbsp brown sugar.
2) Arrange pineapple slices on bottom of tin. Place a Cherry in the centre and circles on the sides.
3) Sprinkle another 1 tbsp brown sugar.
4) Cream butter, sugar and essence until light and fluffy.
5) Add egg one at a time, beating well after each addition.
6) Fold in sifted flour gradually.
7) Add in the pineapple juice and mix well.
8) Pour batter into prepared tin and bake for 45-55 minutes or until cake is cooked.
9) Cool cake in the tin for 15 minutes before turning out onto a wire rack.

Banana Cake

Ingredients

4 bananas (medium size)
3 eggs
1 3/4 cups self rising flour
1/4 cup corn flour
1 cup sugar
1 cup vegetable oil
1 tsp soda bicarbonate

Method




  1. Beat eggs and sugar until light.

  2. Add in mashed banana.

  3. Fold in sifted flour plus bicarbonate soda and stir.

  4. Add in vegetable oil. Mix well.

  5. Turn mixture out onto the prepared tin.

  6. Bake for 45 minutes or until cake is cooked through when tested with a skewer.
