Colourful Apom



Ingredients:
1 cup cooked rice
1 cup rice flour
1 cup wheat flour
1 1/2 cup sugar
1 1/2 cup water
1/2 tsp yis
colour


(1) Blend rice with water.

(2) Mix together the rice and wheat flour.Followed by sugar and yis.

(3) Now add the rice mixture into the flour mixture. Whisk until well mix.

(4) Divide the mixture to few portion and add in the colour.

(5) Leave it to rise for 2-3 hours.

(6) Pour into mould and steam for 20mins.

Peas Pulao Rice








Ingredients :
2 Cups Basmathi Rice (I used normal rice)
1 cup frozen green peas
1 cup soya meat (cooked before use)
2 tbsp ghee / butter
1 small cinnamon
1 tsp cumin seeds
2 cloves
1 small onion, sliced
3 garlic, crushed finely
1 small piece of ginger, crushed finely
salt to taste
3 cups water
Pandan leaves
1 tbsp cashew nuts
2 tbsp coriander leaves, chopped finely

Method:
(1) Heat the ghee. Add cinnamon, cumin seeds, cloves, onion, crushed garlic & ginger. Fry until onions turn transparent.
(2) Add green peas and mix well. Add rice to this mixture and fry for 30 seconds.
(3) Add this rice mixture, salt, water and pandan leave into rice cooker and allow it to cook.
(4) Use wood plastic spoon to stir slowly. Sprinkle some water if the water not enough to cook.
(5) After cooked, garnish with fried cashew and coriander leaves.

Almond Chocolate cupcake (Eggless)





Ingredients :

300g self raising flour
50g cocoa powder
15gm baking powder
250g caster sugar
150ml sunflower oil
350ml fresh milk
few drops of almond essense
100gm Almond powder

Method :
1. Sift self raising flour, cocoa powder and baking powder.

2. Add in castor sugar.

3. In another bowl, mix together oil, fresh milk and vanilla essence.

4. Pour the liquid into the dry ingredients and mix till smooth batter is formed.Add in Almond powder and mix well.

5. Spoon into the papercups and steam in a preheated steamer for 15 - 20 minutes.

Triffle








Ingredients :

1 whole swiss roll
1 canned cocktail fruits
10gm agar-agar powder
3/4 tin evaporated milk (Ideal)
3/4 tin water
7 tbsp sugar
4 tbsp custard powder
Pandan Leaves

Method:
(1) Cut the swiss roll and arrange in a mould. wet the swiss roll with the cocktail's water. Its to make the cake heavy and it won't float when pour the pudding. Keep aside.
(2) Combine agar-agar powder, sugar, water and pandan leaf in a saucepan and bring to a boil.
(3) Add in evaporated milk. Let it boil.
(4) Mix custard powder with 1/2 cup water. Slow down the heat. Add custard mixture into the agar-agar mixture.
(5) Remove from heat, take out the pandan leave and add in cocktail fruits. Stir well to cool slightly. Pour on swiss roll.
(6) Leave aside to set then set them completely (until firm) in the freezer.

Tuna Muffin




Ingredients :
1 egg
1 1/2 tsp sugar
1 tsp baking powder
120gm flour
80g canned tuna
50ml fresh milk
50gm cheese (I didn't add)
1 garlic, crushed
A pinch of salt

Method :
1) In a bowl, add egg, sugar, garlic and salt. Stir well.
2) Stir in tuna fish.
3) Add in flour and milk. Stir until well combined.
4) Add in the cheese.
5) Pour batter into prepared muffin pan until three quarters full.
6) Bake until well risen and lightly golden. Serve muffins warm with chili sauce.

Pandan Chocolate chips muffin






Ingredients:
2 1/4 cup self rising flour
1 1/2 tsp baking powder
3/4 cup castor sugar
200ml fresh milk
100 ml vegetable oil
2 eggs
1/2 tsp pandan essence
1/2 tsp green colour (I used green apple colour)
Handfull chocolate chips

Method:

1) Blend 4 pandan leaves with fresh milk and sieve.
2) Beat the eggs and sugar; add in the oil; continue beat.Add in the pandan essence and colour.
3) Sift the flour,baking powder together.
4) Alternatively add the dry ingredients and pandan milk mixture into the egg mixture.Stir to mix.
5) Finally add the chocolate chips.
6) Pour into papercups and bake.
