Orange Cake (Eggless)

Dear Friends,
I follow Hana's Fly blog and did this cake. I modify this recipe as I don't like to use eggs. As usual I use fresh milk. For orange juice I just use 3 tbsp Sunquick and cherries for decoration.










Pumpkin cake (eggless)

Dear frens,
I just follow the Carrot Raisins Cake which I did few weeks ago to do this pumpkin cake. I replace the carrot with smashed pumpkin. I weigh the pumpkin before steam. I replace the raisins with nuts. Its bit moist Pumpkin cake.Try and see.

Carrot Raisins Cake (eggless)









Ingredients:
150gm grated carrot
1/2 cup fresh milk

1 cup self rising flour
1/4 cup corn flour
1/4 tsp baking powder
1/4 tsp soda bikarbonate
1/2 tsp cinnamon powder

1/2 cup oil
1/2 cup honey
1/2 cup brown sugar
1/2 tsp vanila esesnce
a pinch of salt

1/2 cup raisins

Method:
1) Mix together grated carrot in 1/4 cup milk.
2) Sift together the self rising flour,corn flour,baking powder,cinnamon powder and soda.
3) In a bowl, mix together oil,honey, brown sugar and salt .Its difficult to mix well becoz the honey and oil cannot mix together.So i add in the 1/4 cup milk and essence here.
4) Add in the raisins and mix.
5) Now add the sifted ingredients.Mix.
6) Finally add in the grated carrot. Mix well.
7) Grease the pan and bake.

Sweet Bun (eggless)









Ingredients:

25g caster sugar
5g salt
250g superfine flour
1 tsp Instant yeast
143g fresh milk
38g butter

Method:
1)Yis mix with little water and sugar. Let it rise.
2)Place salt and flour in a mixing bowl. Mix the ingredients with hand. Make a well in the centre of the flour mixture.
3) Pour the rised yis mixture and milk into the well. Mix the ingredients to form a soft dough.
4)Turn out the dough onto a lightly floured work surface. Knead for about 5 mins until the dough becomes smooth and non-sticky. Knead and mix in the butter into the dough.
5)Continue to knead dough for another 15mins until it becomes smooth, elastic and no longer sticks to hand and work surface.
7)Smooth the dough into a round ball. Let it rise in room temperature in a mixing bowl, covered with wet cloth. Let dough rise for 60 mins or until it double in bulk.
8)Remove dough and punch out the gas. Turn the dough onto a lightly floured work surface.
9)Place dough in lightly greased bread tin/pan. Sprinkle some sugar on the top of the bun and decorate with cherries.Cover with wet cloth and let the dough proof for the second time for about 45~60 mins, until it fills up 80% of the tin/pan.
10)Bake at pre-heated oven at 180 ~ 190 deg C for 30 to 35mins.
11)Unmould the bread immediately when removed from the oven.

Corn Strudle











Ingredients:
1 cup fresh corns
2 cups all purpose flour
2 tbsp chopped nion
1/2 tbsp chopped chilli
1 tsp soda
1 tsp salt
Water
Oil for fying

Method:
1) Mix all the ingredients in bowl. Add in water slowly and mix well.Make sure its not oo watery.
2) Heat oil and spoon the mixture.
3) Serve this strudle with chilli sauce.
